Banana Ricotta Pancakes

I believe this was originally a Tobie Puttock recipe - but don't quote me on that!

Ingredients

  • 120 grams Ricotta
  • 2 Ripe bananas
  • 1 Egg
  • 1 tbsp Brown sugar
  • 1/4 cup Self Raising Flour
  • pinch Cinnamon
  • pinch Nutmeg
  • Butter (for pan)
  • Maple syrup and icing sugar to serve

Directions

  1. Mash ricotta in a large bowl with a fork.
  2. Add bananas, sugar, flour, cinnamon, nutmeg and egg.  Mash until well combined.
  3. Heat butter in a non-stick frying pan over high heat.
  4. When it starts to sizzle, reduce the heat to medium and add a ladleful of the mixture.
  5. Cook 2-3 minutes or until base is golden brown and bubbles appear on the surface.
  6. Carefully flip over and cook until golden brown on the other side.
  7. Serve immediately drizzled with maple syrup and icing sugar.  Particularly nice served with fresh strawberries.
