Fig prosciuitto and blue cheese salad

Ingredients
- 6 Fresh figs
- Blue cheese - quantity as needed
- 6 pieces proscuitto
- Large Handful baby spinach
- Balsamic vinegar to taste
Directions
- Preheat oven to 200*. Line a tray with baking paper.
- Slice the figs half, but don’t quite split in two.
- Take small pieces of blue cheese and stuff it in the centre of the figs and press the sides together.
- Wrap each fig with a piece of prosciutto.
- Place on the tray and cook for about 15 minutes, or until the figs are soft and the prosciutto is crispy.
- While cooking, wash your baby spinach and dry.
- Put baby spinach in a bowl, top with a few of the figs and drizzle with balsamic vinegar.
- This is a great side, or would even make a nice light lunch. It also goes well with pasta, steak, chicken.
